Ingredients:
Chicken marinade
Whole chicken
4 cloves of garlic, cut into very small pieces
Half a salted candied lemon
1 tablespoon of turmeric
1 tablespoon of ginger
1 teaspoon of black pepper
Salt as needed + ½ cup of water mixed with saffron threads
For the broth:
Half a kilo of chopped onions
Half a cup of olive oil
Turmeric + ginger + black pepper {½ teaspoon of each spice}
Moroccan ghee
A cup of hot water mixed with saffron threads or {saffron cubes}
A handful of parsley + salt
Method:
To prepare Moroccan Chicken with Olives, start by marinating the chicken with the marinade mixture mentioned above and leave it for an hour if possible.
In a pot on the stove, place the chopped onion, add the oil and sauté until browned and slightly translucent. Add the rest of the marinade and the chicken and sauté on all sides.
Pour the water over it, then add a handful of parsley, a little ghee and a handful of green olives.
Allow it to cook slowly, allowing the flaveurs to blend beautifully. Optional garnishes such as potatoes can enhance the dish. Cook the chicken until it is fully cooked and the sauce has thickened, then serve it garnished with pickled lemon peel for an authentic Moroccan experience. It can be served with French fries.
